🛒 Ingredients
- 1 lb ground beef, pork, or chicken livers (traditional choice)
- 2 tbsp vegetable oil or bacon grease
- 1 small onion, finely chopped
- 1 green bell pepper, diced
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 1 ½ cups long-grain white rice, uncooked
- 3 cups chicken broth
- 1 tbsp Tony Chachere’s Original Creole Seasoning
- 1 tsp paprika
- ½ tsp thyme
- ½ tsp black pepper
- ¼ tsp cayenne pepper (optional, for extra heat)
- 2 green onions, chopped (for garnish)
- 2 tbsp fresh parsley, chopped
👩🏽🍳 Directions
- Cook the Meat:
Heat oil or bacon grease in a large skillet over medium heat. Add the ground meat or livers and cook until browned, breaking it apart with a spoon as it cooks. Drain any excess grease. - Sauté the Vegetables:
Add the onion, bell pepper, celery, and garlic to the skillet. Cook for 5–7 minutes, stirring often, until the vegetables are soft and fragrant. - Season the Base:
Stir in Tony Chachere’s seasoning, paprika, thyme, black pepper, and cayenne. Let the flavors blend for 2 minutes. - Add the Rice:
Stir the uncooked rice into the mixture, coating each grain in the flavorful oil and seasonings. - Simmer:
Pour in the chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes, or until the rice is tender and the liquid is absorbed. - Fluff and Finish:
Remove from heat and let sit covered for 5 minutes. Fluff with a fork, then stir in chopped green onions and fresh parsley before serving.
